chicken and feta salad
Ingredients

3cups cooked boneless skinless chicken breasts, chopped

1⁄2 cup each of yellow green and red bellpepper, chopped

1⁄2cup English cucumber, cubed

2ounces feta cheese, crumbled (1/2 cup)

1⁄4cup of fresh mint, chopped
-
1 1⁄2tablespoons fresh oregano, chopped

2tablespoons fresh lemon juice
-
1 1⁄2teaspoons extra virgin olive oil
-
1⁄4teaspoon salt
-
1⁄4teaspoon fresh ground black pepper

mint sprig, garnish (optional)
Instruction

Combine all ingredients except mint sprigs in a large bowl; toss gently to combine.

Garnish with mint sprigs if desired.
